  • 4 cups seafood or chicken stock
  • 1/4 tsp saffron threads
  • 1/4 cup olive oil

  • 1 tsp smoked paprika
  • 2 cups short-grain rice (bomba or calasparra)

  • 1/2 lb large shrimp, shells on
  • 1/2 lb mussels, cleaned
  • 1/2 lb calamari rings
  • 1 cup frozen peas
  • Lemon wedges and chopped parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Heat the stock in a pot with the saffron. Keep warm.
  2. In a 15-18″ paella pan, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until softened, 5-7 minutes. Add the tomatoes and paprika, cook 2-3 minutes more.
  3. Add the rice and toast for 1-2 minutes, stirring. Pour in the wine and let it absorb.
  4. Add 4 cups of the warm saffron stock. Bring to a boil, then reduce heat to a simmer. Do not stir after this point.
  5. Nestle the shrimp, mussels, and calamari into the rice, pushing them down into the liquid. Simmer for 10-15 minutes until the rice is al dente. Add more stock if needed.
  6. Remove from heat, add the peas on top. Cover with foil and let rest for 5-10 minutes.
  7. Garnish with parsley and lemon wedges. Serve, making sure to scrape up the crispy rice crust (socarrat) from the bottom of the pan.
